Guam Eggplant in Coconut Milk
...barbequed, broiled, or boiled eggplant with coconut milk and lemon.


In Chamorro, this is called fina'dennen birenghenas. Japanese eggplants are best used for this dish; they are the skinnier eggplants more commonly available at an Asian grocer. Some people prefer to barbeque eggplants. My dad boils his eggplants because it yields more "meat" for the dish.
