Guam Spam Kelaguen
...Chamorros love to mix "meat" with lemon, onions and hot pepper.


Islanders, we love our spam! We love to kelaguen meat, chicken, seafood and whatever else tastes good with lemon, salt, onions, hot pepper and coconut. Though spam is already cooked, "kelaguening" something generally means to cook raw protein with lemon juice and salt. Lemon powder is also commonly used while unsweetened lemon Kool-Aid is a quick substitute for the  powder....but I am leary of using Kool-Aid for uncooked protein.
